“LUCKY DOG” SHRIMP & TORTELLINI SALAD
Dressing
1/2 cup olive oil
juice of 1/2 orange
juice of 1/2 lemon
1/4 cup Fini® Balsamic Vinegar of Modena
1 teaspoon sesame seed oil
1 tablespoon hot sauce
1 tablespoon Dijon style mustard
2 cloves minced garlic
1/2 cup loosely packed chopped fresh basil
1/4 teaspoon salt
1/8 teaspoon black pepper
Salad Goodies
2 cups cooked DaVinci™ Tortellini
2 cups cooked and chilled small shrimp
1/2 cup 1/4-inch diced red pepper
1/2 cup 1/4-inch diced green pepper
1/2 cup sliced green onion
1/2 cup sliced almonds
1. Place the Dressing ingredients into a blender, or in a tall container if using a hand blender. Blend until smooth. Cover and refrigerate until ready to use.
2. Place the Salad Goodies in a large mixing bowl.
3. Pour the dressing over the salad mix and combine.
NOTE: DO NOT OVERMIX or it will break apart the shrimp.
